Housewives used to preserve vegetables that were available in quantity only during one season in extra virgin olive oil so as to have them available during the rest of the year. Dried tomatoes, artichokes, mushrooms, olives were processed in the most diverse ways: drying them first in the sun, cooking them in water and vinegar or putting them in brine. With this dedication and simplicity, great masterpieces of the Sicilian gastronomic tradition were born.
