The Veal for Boiling is ideal for long slow cooking. With a pinch of patience, but with a great quality ingredient you can obtain a very soft and melting second course of the great Sicilian culinary tradition. Put the meat in cold water with celery, carrots and onions. Also add potatoes and herbs to taste, salt and pepper. Light the fire at a moderate flame and once the meat is cooked you will have a boiled meat that you will not easily forget. With the remaining broth, you can also choose to cook an excellent first course of pasta.

Our calves were born and raised in Sicily, in an area between the low Madonie and the Sicani Mountains between the municipalities of Alia, Castronovo di Sicilia and Valledolmo. Raised in full respect of animal welfare, their diet is based on hay, straw and cereals, so as to have tender meat with a uniform color. Furthermore, our meats are properly aged after slaughter in refrigerator cells at controlled temperature and humidity, so as to obtain maximum tenderness and melting.
