Ready-made sauces and gravies

The ready-made organic Sicilian Siccagno tomato sauce Le Bontà di Villa Dafne is made only and exclusively with Siccagno tomatoes grown on our farm, between Alia and Valledolmo in the heart of the Sicilian hinterland.

The Siccagno tomato is characterized by an extraordinary organoleptic quality enhanced by the transformation process. Once harvested, the tomato is immediately taken to our company's laboratory to be processed fresh. Here it is washed, selected, crushed and passed, to be cooked for about an hour with the addition of basil, onion and extra virgin olive oil, according to an ancient family recipe. Once cooked, it is finally bottled in glass jars and sterilized. Ready to reach your kitchen and color with red passion every recipe in which you want to use it: from traditional dishes to culinary experiments.

The cultivation of the Siccagno tomato has ancient origins, thanks to the highly clayey nature of the soil and the microclimatic conditions of central Sicily it is possible to grow tomatoes in a non-irrigated regime (technically called "aridoculture" regime, or with little or no water). Cultivation involves deep plowing in the month of September-October, so that the soil during the winter and spring seasons can absorb as much water as possible. At the end of spring the seedlings are transplanted, which will be irrigated only 2 or 3 times at the beginning of their growth phase. Then the seedlings will grow throughout the summer thanks to the Sicilian sun and thanks to the water that the clayey soils have stored during the rainy season. In September the harvest takes place, done strictly by hand, which settles on yields of 90 quintals per hectare, compared to 600 quintals per hectare of the irrigated one. The low production yields, however, are compensated by the extraordinary organoleptic quality of this tomato.
