Fiore Sicano is a cheese produced exclusively with cow's milk, with a soft paste and a bloomy rind. It is made in a way that recalls the classic French bloomy rind cheeses, but with a typically Sicilian character. The color of the paste ranges from ivory to light straw yellow, and it has a taste that recalls cooked butter and yogurt with a slight acidity and a medium intensity sweetness. Fiore Sicano is ideal to present at the table, to be tried in combination with honey and jams on a beautiful cutting board where it will be the undisputed protagonist, together with an excellent sparkling white wine. It is recommended to serve Fiore Sicano at room temperature, to ensure that it releases its fragrance and, above all, its aroma to the fullest.
Fiore Sicano is a cheese produced exclusively with cow's milk, with a soft texture and a bloomy rind. The processing of Fiore Sicano involves coagulation temperatures of 36-37 °C (slightly lower than the temperature used for the coagulation of classic Sicilian cheeses) and the breaking of the curd into large pieces. The forms are left to drain in round baskets for 3-4 hours, during which they are turned several times. It is a cheese with a short maturation period (about 30 days). Once the maturation is complete, the surface is pure white in color, due to the development of molds of the "pennicillum" genus, which give the so-called "blooming" to the rind, typical of this cheese, called precisely "blooming rind". The rind is edible and gives a hint of yeast and bread crust to this magnificent cheese.
