Rolled Pancetta is a tasty cured meat produced with the girth of our pigs. The pork belly, in fact, is deprived of the rind, and is salted and tanned with herbs and then rolled up and tied tightly with a coarse-diameter string. After that, it remains to mature for about 2-3 months in refrigerated cells at controlled temperature and humidity. Tender, tasty and very soft, Rolled Pancetta is ideal to combine with hot and/or toasted durum wheat flour bread.
