The Local Cooked Ham with rosemary is made only with the thighs of our pigs, fed and raised with the best practices to always guarantee a correct state of well-being and a high degree of sustainability. The production technique involves the preparation of a brine in which the hams remain for 5 days. After that they are gently massaged and flavored with rosemary, tied with a coarse diameter string, and finally baked with all the rind for about 10-12 hours at low temperature. This allows all the aromas to be imprisoned within this great cured meat of the Italian tradition and to keep it tender, tasty and fragrant. Cooked Ham is one of the most famous cured meats of the Italian tradition. This Cooked Ham in particular is produced with meat from pigs born and raised in Sicily, in an area between the lower Madonie and the Sicani Mountains between the municipalities of Alia, Castronovo di Sicilia and Valledolmo. Thanks to a slow and delicate massage, the meat is made to absorb the mix of natural aromas, rosemary and spices and the meat softens releasing unmistakable aromas, and then is subjected to slow steaming. The tying done by hand by our experts allows the meat to be compacted and gives it its typical irregular shape.
